Strawberry / Pistachio Cake

The side is made of a really thin Joconde Cake and Raspberry Jam.

The cake itself is a light chiffon cake, cut in three and filled with Swiss Butter Cream mixed with homemade pistachio paste and Strawberries.

Decorated with pistachio paste and marzipan roses.

The main difficulty is the joconde cake which has to be baked evenly even though it's barely a few millimeter thin.

Milk Chocolate Crémeux with Sesame Crème Anglaise

I wasn't sure about the "Toasted Sesame Crème Anglaise" but it's phenomenal. The only problem is that if you take one spoon of the chocolate you can't really taste the subtlety of the sesame seeds afterwards. Did I mention there's some Single Barrel Colorado Bourbon in the "Crémeux" and Fleur de Sel on top of the Crème Anglaise? :-) TO...DIE...FOR!

Chestnut Puzzle Cake

Chiffon Sponge Cake (regular + Chocolate) garnished with Swiss butter cream (Chocolate + Chestnut puree) and Frangelico liqueur.

Improvement: - Circle should be 10in diameter; not 9. - Layers should be 12mm, not 16mm thick - More chestnut to match the chocolate flavor. - More moister to make it easier on the diagonal.
